Details 
- drop ClientPortal module, ClientTicket entity, ROLE_CLIENT and all couplings (Task, TaskDocument, User, Notification) back to an internal-only model

- migration drops client_ticket / user_allowed_projects / related FK columns and removes leftover external client accounts (would otherwise be promoted to ROLE_USER)

- remove client-portal frontend module, admin tickets tab, user portal section, portal nav item and portal/clientTicket i18n keys

- fix directory nav icon (invalid mdi:contact-multiple-outline -> mdi:card-account-details-outline)

- add 'make sync-permissions' target, wire it into install/db-reset and the prod deploy script

Matthieu 6c32110288 fix(prod) : créer var/log dans l'image pour que le volume de logs hérite des droits www-data 
Le volume nommé lesstime_logs est monté sur /var/www/html/var/log, mais ce
dossier n'existe pas dans l'image. Au premier montage d'un volume vide, Docker
crée le point de montage en root:root, ce qui empêche www-data d'écrire les
logs et fait crasher l'application. En créant var/log avant le chown -R, tout
volume de logs neuf hérite des droits www-data automatiquement.

Matthieu 5da165f739 docs : corrige le déploiement prod (Docker) et documente les variables d'env mail 
- README : section Variables d'environnement (ENCRYPTION_KEY, LOCK_DSN) + section Déploiement passée au flow Docker (deploy.sh)
- mail-cron-setup : sépare dev (make, php-lesstime-fpm) et prod (lesstime-app, docker compose exec), cron prod réel
- infra/prod/.env.example : ajoute ENCRYPTION_KEY et LOCK_DSN (manquaient, requis pour la sync mail)

Nginx returns a 503 page when maintenance.on exists. The deploy script
automatically enables/disables maintenance mode around the update.

matthieu 1ae9535516 refactor : reorganize infra files into infra/dev and infra/prod 
Consolidate Docker, Nginx, and deploy configs from 5 scattered directories
(docker/, deploy/docker/, deploy/nginx/, script/) into a single infra/ tree
with dev/ and prod/ subdirectories. Update all references in docker-compose,
Makefile, CI workflows, Dockerfiles, and documentation.
