Move MCP session storage from cache dir to var/mcp-sessions
so it survives cache:clear operations.

Add symfony/monolog-bundle with rotating file logs in dev (7 days)
and fingers_crossed + rotating file in prod (30 days).
Deploy script now ensures var/log/ permissions.
