feat(auth) : creation entite Profile avec JWT

- Entite Profile implementant UserInterface
- Support authentification JWT via email/password
- Repository avec PasswordUpgraderInterface
- Migration Doctrine pour table profiles
- Script utilitaire creation utilisateur test
